The Flying Stove

I finally got a chance try out The Flying Stove, one of Wichita’s non-taco food trucks. I have been web-stalking them since they opened, drooling over their yummy-looking pictures and Facebook posts. I’m happy to report that the food tastes even better than it looks.

I arrived early so I wouldn’t have to wait in line, and I’m glad I did. By noon, more than 30 hungry people had queued up. I ordered the speck and burrata sandwich with garlic aioli, basil and tomato, and a salad of julienned snow peas with grana padano cheese, mint and pancetta. The sandwich was rich and delicious, the crispy grilled bread barely containing the creamy burrata cheese and smoky, prosciutto-like ham. It was drippy and warm and satisfying. The snow pea salad was a bright crunchy contrast, the mint and pancetta adding a spike of herb and fat. I had a bite of a friend’s street taco, a spicy mouthful of pork carnitas, cilantro, and avocado salsa. One taste made me wish I’d ordered one of those as well, but I was already stuffed.

Lucky for me, they parked their truck right next door a couple of days later. People have been raving over the Umami Burger, so I tried one. It was wonderful, a crisply seared, thick, juicy hamburger with a parmesan cheese crisp, roasted tomato, caramelized onions, and arugula. It was savory and meaty and everything you want a hamburger to be.

Their menu changes every few weeks, so you’ll want to keep in touch with them via social media. The three friendly men packed into that cute truck make creative, delicious food to order, so there is a bit of a wait, but it goes quickly. Bring a friend and chat, or people-watch and listen to the fun music emanating from the speakers.
