Sunflower Sampler by the Junior League of Wichita

With the holidays almost upon us, cooks everywhere begin to contemplate favorite dishes and new treats-- and here in Wichita, that often means reference to the Sunflower Sampler. Now, just in time for the season, the Junior League of Wichita has released a special 36th anniversary limited edition of the 228 page, 450 recipe collection that supports not just cooks but community projects. A Sample Recipe from the Sunflower Sampler:

Chicken Stuffed Mushrooms
18 Large Mushrooms
6 tablespoons butter
1 ½ cups chicken, cooked and diced
1 ½ cups bread crumbs
Chicken Broth
1 egg
2 tablespoons grated onion
1 tablespoon parsley
1 teaspoon salt
Pepper
Buttered bread crumbs
Heat oven to 300 degrees. Wash mushrooms, separate stems, and dry on paper towels.
Chop stems; sauté in butter. Add chicken. Add bread crumbs which have been moistened with chicken broth and egg. Add onion, parsley, salt and pepper. Stuff mushrooms and top with buttered bread crumbs. Bake in shallow pan to which a little water has been added. Bake 40 to 45 minutes.
Yield: 4 to 6 servings.
